Tonight I had a healthy dinner with my friend Rachel. We went to a restaurant called The Red Cat (I admit: I went in there because I have a red cat) and settled on splitting two appetizers. We started with a delicious risotto and seared scallops covered with sauteed green onions. Then we had a dandelion greens with goat cheese mousse, dried cranberries and toasted pumpkin seeds (a completely local salad!). It was all amazing and I felt quite proud of myself for splitting everything.
